  • lamb ribs

    I was at wal mart today and saw some lamb ribs. $5 for two racks so I figured why the hell not. I'm wanting to throw them on the smoker but not sure about cook time and finished temp. Anybody done these before?
    Why put off till tomorrow what you can put off till the next day?

      personally i wouldn't smoke lamb, i dont think they need much added flavor.

      i've done lamb chops (broken down ribs) before. they don't need much. just marinate for like an hour and let them get up to room temp. i used olive oil, garlic, salt, and pepper plus some herbage. i went with rosemary and a bit of thyme. i cooked them to medium on a hot cast iron. tasted great.

      you could always make a sauce for them if you want to get fancy.

                If you smoke them just for some flavor, i'd say smoke them for 15-30 minutes at 200-225 degrees just to get a hint of smoke on them. Also, put them on the smoker cold, right out of the fridge, so you are getting smoke flavor without cooking them too much during that time. Use a light wood, like a fruit or nut wood, peach, pecan, apple, etc.

                Then throw them on a hot grill or flat cast iron surface to sear and brown the outside, just a couple of minutes a side on the highest heat.

                Toss in an oven at 325 degrees for 10-15 minutes until they reach a nice medium/medium rare.

                Let sit for 5 minutes after pulling out of the oven
