If you don't want any scratches, I'd steer clear of Bates...they can be hit or miss.
I recently had an incident with North TX Yamaha (see thread), but they ended up making it right and buying me a new wheel. So I would recommend them. Just be sure to make sure you're clear on the fact that you don't want any scratches.
I would have said Cycle Gear, but they put 3 knicks in the rotor carrier on my 954 front wheel last weekend. They've typically done a great job though (Bedford).
There's also North Texas Superbike on 407 in Highland Village. Might be a few bucks more, but they will do a good job. Had wheel weights fall off once right after I got a wheel back from them, but they typically do a good job. That's where I'll be taking my supermoto wheels to have the new tires put on next.
