  • Who's smoking this weekend?

    I picked up a couple pork butts for a smoke I plan on starting early Saturday morning and hoping to eat around 5pm. Each one weighs about 8lbs and I'll smoke them with a mix of pecan/oak. Haven't decided what else I'll throw on the smoker with em, but I'm sure I'll do some buffalo turds and I have 30lbs of Luling City Market Sausage that is dieing to be smoked also.

      OMG you're making me freaking hungry now. Looks yummy.

          I did a brisket last Sunday. This Sunday I using it to make jerky.

            Beer boiling then smoking some brats tonight, have some sauer kraut going as well. Boston butt brining for Sunday, and several racks of ribs for tomorrow

                I'll probably smoke between a pack and a pack and a half in a 4 hours time span during football.

                    When a cracka get his drank on, a cracka smokes like a chimney. Granted, when I smoke, I only smoke a bit over half of one, but I only wait a few minutes to light up another one. If I'm not drinking, I'm not smoking.

                        I got up at 4:15 this morning to fire up the pit. Meat went on at 5am. Pics to follow.

                          Got some update pics.




                          Money shot.



                          Currently the meat is sitting at a temp of 191 degrees. I'm going to let it go a few more degrees and then rap it in foil and rest it.


                          I had a storm pass over and rain for about 15 minutes. I didn't lose my fire put it dropped my temps about 50 degrees.


                          My dog thinks I might be running low on wood and he's guarding his favorite piece.

                            All finished and damn it was good. I cooked the butts to an internal temp of 200 degrees then I double foiled them and rested them in a cooler for 1 1/2 hours. They pulled really nice and all the fat in the middle of the butts had turned to liquid. So other than the outside fat cap there was very little discarded.
