    Doing low carb has made me try a lot of cheese over the years. Now it has gotten to where the guys are mad if I don't bring in a slab for them to try at lunch. That said HEB has gotten a hell of a selection of cheese. Lately my favorites are Gouda Steakhouse, Gouda with bacon, and some new Greek Herb one was outstanding I tried the other day. Then there was the sharp cheddar with hot sauce blended in. It was also very good. What was really funny was watching the guys cough and wheeze because it had some heat. Costco has some great blended cheese singles also.

                I first gave up sodas, bread, and then cheese over the previous three years. This is my second time for cheese. Never had a soda again, bread only very occasionally. I gave up beer about ten years ago because it had reached the point where it did little more than make me sleepy and raise my triglyceride levels.

                  I did give up fast food of all types, beer and anything fried since the Super Bowl. I could never give up cheese or Bourbon though. I didn't do it for Lent, I just needed to lose some wieght and its working...

                      One positive result of my having given up cheese was that my fasting blood glucose level dropped to 78, lowest ever for me, when I had routine blood work done a week ago. Only about a week to go before I'll be back to having it again.

                          All of my stats are spectacular for my age and I eat the shit out of cheese and meat only almost.

                            I can eat a lb of cheese easily in one serving. Cholesterol/triglyceride numbers remain excellent regardless, but excessive cheese seems to trigger a rise in glucose for me.
