      I've been a Henckels guy since we got a nice set as a wedding gift decades ago, but there are several really nice manufacturers out there.

                  Currently replacing my Henckels with Wusthof Ikon Classics. Be careful with Henckels. The "International" knives are not the same quality as the German made Henckels. You can tell them apart by the logo. German made feature the two man logo. International is a single man logo. I've had a set of each, and I won't ever buy another set of Henckels, German made or otherwise.


                  When looking at knives, buy what feels comfortable in your hand, but take the following in to account.
                  Forged blades.
                  German steel if it's within your budget.
                  Full tang is a must for me.
                  Balance is almost everything.


                  I also want a Bob Kramer Damascus Chef's knife before he dies. But at $800/inch, it's going to have to wait a while.

                    I've got a set of Calphalon and have no complaints. After buying these I get irritated when I'm at someones house helping prep food and they don't have a decent set of knives.

                          $500 can get you a decent 10-20 piece set from any of the names I mentioned above.
