10:15p brisket smokin time!

I would, but my smoker is packed to capacity this time around! Fucking tiny ass smoker.... It's so full, I may have to cut the briskets to be able to fit it all in there.

How does that affect the quality? I was wondering, if I ever have to, will the meat dry out faster. Does it matter how I cut it?

I've never had to do it before. I'll let you know how it goes.

Buy a pager set up. They are cheap and you can set it to let you know if it gets too hot or cold.
