I can't even remember how I rooted mine but it couldn't have been that hard. XDA-developers has a million "how to root your Captivate/Galaxy S phone" posts, find one and root it.
Then download Titanium Backup and back up everything.
Copy the TitaniumBackup folder from your phone to your computer for safe keeping (you can probably get away with skipping this part - I did this morning)
Go here: http://serendipity7.weebly.com/download.html and follow his instructions

It's worth it, and it's not that difficult. When I first got my Captivate, I thought I made a big mistake because it was so clunky and slow. Then I read for an hour or two, rooted it, picked out a couple ROMs to try, and settled on one I liked. It's really, really hard to screw these phones up, and it's really, really easy to get them running hot.

        <--flashed to Serendipity VII tonight
