  • Chili (not the person)

Who's got some good no bean recipes? Having a cook off at work and am thinking of mixing it up with trimmed and cubed brisket. I usually do 1/2 chuck and 1/2 chopped up stew meat.

I had a great one in my golf bag Saturday morning. Damn the luck.

        4lbs meat (your choice)
        1 med red onion
        1 sm white onion
        2 8oz. cans tom sauce
        2 tsp garlic powder
        1 tsp salt
        4 heaping tsp cumin
        2 tsp oregano
        2 tsp red pepper
        2 shots tobasco
        1tbsp oil
1/2 cup (plus) dark chili powder

+/- to taste... that's my starter kit and I usually go nuts from there

I cheat. It's a lot of work, but good, other than the Italian sausage. I replace it with good sausage.

And yes, it has beans. I've never tried it without them.

I've made that before, it was good but way too many ingredients.

Instead of ground beef, go to your best bbq joint and pick up a pound or two of smokey sliced brisket and dice it up.

Yup, or even some venison in there as well. I change it up pretty much every time.

We started using venison for everything and quit buying beef. I smoked a loin last weekend and it's damn delicious, almost as good as a cut of brisket.

Well, you're wrong. If you put beans in chili, you didn't make chili.... you made a pot of beans.

Without beans isn't it just a meat soup?

Beans are a filler food for poor people. If you can add beans, you can add more meat.
