  • Making some biltong

    Well a coworkers husband made some damn good beef jerky and has sent some my way a couple times. This got me to missing some good ole biltong. So I decided to try and make some. We will see how it ends up in a couple days. I think Im going to pull a sample on day 2 and see how it is.. I prefer mine more moist than dry.

    For those who dont know what biltong is, it is a type of cured meat similar to beef jerky. Its a South African traditional meat that is awesome. Its just some leaner cuts of meat that is cured in vinegar, seasoning and then dried.

    My ghetto biltong box (had $7 or so into it)


    Couple PC fans to exhaust the moisture


    The lightbulb helps gently heat the air and dry it. If it all goes well, I will probably build a nice wood box to keep making it.

    Hope it will end up looking like thisad 2 days:

    Some like it much drier and harder to chew and looks like this which is dried for 3-4 days:

                still drying... I tried a piece at 48 hours and a little moist. Im about to try another piece at 60 hours.

                I dont have any pics yet but I will get some later. It came out they way it should minus the flavor. I will have to figure out a better way to season it. I think I may do the crazy kosher salt method the way I do steaks then add some external seasoning.

                I will try another smaller batch this weekend and see how it goes. The 5lbs I made will definitely be eaten...just not thrilled. Practice makes perfect.

                  This recipe seemed to get good reviews
                  stephan gates terrific version of biltong, essentially air dried beef. The cook time is zero but none of the times include up to 20 days hanging


                  I always stay at the Southern Sun Montecasino in Fourways when I go to SA for work and they have all kinds of great biltong in the gift shop and at the steak house there. It's too bad you can't bring meat products back to the States.
