        A GOOD set of knives shouldn't ever have to be replaced. If you have 2-3 years out of a set of KitchenAid knives, you're ahead of the curve.

          I've recently discovered Masahiro knives.

          I bought a 240mm double edged fillet knife and it's not a knife, it's a fucking weapon.

          Double edged, high carbon stainless steel. In Japan this knife is primarily used to filet whole fish.


          I used it on a yellowfin tuna I caught and usually we put the knife in and use the spine as a guide. This knife cut THROUGH the spine it was so sharp and efficient. Here's a pic of how easily it went through the spine.

                I started using a ceramic blade about a month ago. The thing is awesome! You never have to hone it, it's sharper than anything else I have and it cleans up very easy.

                  I keep a ceramic blade with my camping gear so I don't have to take one of my good knives and worry about messing them up. It was cheap and works great.

                    Believe me no cowskin rugs here. Just want the main knives replaced with knives that will last until I die.

                    More of a investment to get away from the crappy kitchaid ones that need constant sharpening.

                      I just carry a basic and cheap Gerber Paraframe II. The one I've have now has lasted me 3 years so far for 20 bucks. If I break it or beat on it too much I won't feel bad since it was so cheap.

                              Dont think I really need anything else. I wont ever buy a block set again. These Shun knives are way better than anything else I have used. The santoku is very versatile you probably could get away with it and a small paring knife.
