What do yall use to clean the interior plastics i n your car? I don't like the glossy wet look, I'm just looking for something with Uv protection.

I use Meguiars All purpose cleaner + (APC+) diluted 10:1 and a dedicated interior microfiber and upholstery brush. I dress with a matte finish, or glossy finish. (according to what the person asks for)

You can pick up Meguiars Ultimate Protectant and dilute it down if you'd like less shine. Using it straight out of the bottle will leave a medium gloss I would say.
Or pick up Meguiars Natural Shine Protectant that leaves it to a matte finish (I use this the most because I too don't like a glossed finish but rather natural)

For a vibrant glossy finish. Meguiars Supreme Shine does the trick.

All of the above except for APC+ can be picked up at Autozone/O'Reilys.

A few others I use often are Four Star Ultimate Vinyl Protection and Wolfgang Vinyl and Rubber Protectant. The Wolfgang has a minor sheen to it but once wiped with a clean microfiber it ends up in a matte finish.

    I hope this helps.
