I have never smoked a turkey (smoker too small I think) but I do fry several every year for thanksgiving and Christmas.. I LOVE me some cajun fried turkey

my brisket is looking GOOOOOOD right now.. I can't wait for dinner
As for the turkey, do a breast. You've got the same cheap ass smoker I have. lol

I don't like beef ribs. Pork ribs, are great. You can't rub them down with mustard like you would a brisket or pork butt though. I don't know what it is about the rib, it it will taste like straight up mustard if you do . Just peel the silverskin, hit it with a dry rub, and voila. It really is that easy.

Haha what makes you think it's cheap? Is it the fact that more smoke comes out the door then the stack?

That, and the fact that you can get a new one for roughly $200. Hahaha

I bought mine from the Evil one for $50 or so. It works, but it leaks like like no other. It can't be beat for the price. I'm just far beyond ready to step up to something much larger, and well built.

You have to learn by doing with cooking. There's no shortcut.

Yep. Trial by fire. Literally. To me, that's the fun part though. It sucks when experiments don't go as planned, or when you screw something up, but learning is a constant process, and all knowledge you gain, whether from a perfect experiment, or failed experiment, is knowledge worth having.
