What you want is the meat to pull back some from the bone at the ends and it should come off the bone easily when you're eating it. Obviously the meat should still be tender and juicy.

It still comes off the bone easily if cooked right. You need to be able to take a bite out of the rib without all of the meat coming with it. If that makes sense. Yep. Has a lot to do with how the cooking was done when someone was raised, too. A buddy of mine was raised on bland, processed food. Hamburger Helper, etc. He has no appreciation for good food. Palates develop over the years too, but only when you expose yourself to new and different things. I'm so anti chain, because it caters to the masses, it's subpar quality and typically bland. There is no originality or anything bold with chain food. Friend: They fall off the bone!
Falling off the bone is not good, flavor is good! Fucking boiling them in a pot and they fall off the bone. I like them to separate from the bone when you rip into them, but to fall off the bone - may as well do some plain slab of meat.
Wow, that was way more griping than I intended to do.
And a "fall off the bone" rib is an overcooked rib, in all actuality.

I can agree with this oddly enough. Although, I think "taste" comes with age and experience and then some people never learn. There are good places that go under too, because people don't appreciate a personalized menu by a chef with their own touches. i.e. Ribs.
