I've noticed this as well. They're the fox body of engines. Millions of parts, millions of combinations, and ease of availability. SBC were the hot rod standard for years so the "mullets" don't venture outside that realm. I'm not one for badge mixing so I would prefer a classic to be kosher.
Presently, you could put a supra motor in a '95 Taurus Wagon and it would be innovative. Someone's probably done it and posted the complete step-by-step guide on the interwebz.

aftermarket started supporting the sbc as a replacement to the flathead when it was released in 55. that aftermarket support has carried till now. you see a ton more ford powered rods now than you use to.
