Mike, you are going blind and you are confused. You keep saying 'blown' when in fact it's 'leaking'. Blown would imply that you have a piece missing from the gasket. A leaking headgasket (especially on this) will look like a black stain. You will chase your tail trying to find out why it's not running right, running hot, misfiring, melting plugs etc.
THIS picture explains it all. You don't have to have any special tools to see this thing is leaking BAD at either side of 12 o'clock. This is VERY common on SBF - especially one with a ton of miles and stock headbolts.
It wasn't pressurizing, it had a few bubbles but only after the thermostat opened, and the cap was off. Thermstat is at 180degrees. Gauge was halfway, without a cap and no pressure it's possible it was simply boiling as the "fumes" smelled like coolant.
My first thought was incorrect, but im thinking that's all it was.
so you are saying you tore it all apart for nothing then right?

Question. Does your intake have the filter still in the pcv hole. If not you could be getting some of the blow by oil pulled through there which is what your getting on the valves and plugs. But doesnt change the fact it needs refresh at min. You need to put the filter in when you put it back together
