    Suggestions?


    The fiancée snagged a 45 lb yellowfin while we were in Cabo.

    We cut some sashimi right there on the dock, took some of the meat to a local joint that night and had them do a variety of styles w/ it (garlic butter, fried, blackened and more sashimi), and we brought home 28 lbs vacuum packed.

    Other than sashmi and nigiri (and I plan to learn to make sushi rolls)... any favorite recipes?

    GRILLED AHI STEAKS 2-8 oz

    Marinade:
    1 cup soy sauce
    1/2 cup lemon juice
    1 clove crushed garlic (for each steak)
    4 tablespoons extra virgin olive oil
    small amount of sea salt, to taste
    fresh ground black pepper, to taste




    GRILLED TUNA WITH MANGO-CHILI SAUCE

    3 lbs. fresh yellow fin tuna
    3 mangoes, peeled and diced
    1 c. cilantro leaves, chopped
    1 jalapeno, chopped
    1/2 tsp. chili powder
    1/2 tsp. crushed red pepper
    Juice of 2 limes
    1 onion, chopped
    Salt to taste

        Smoked tuna jerky is possibly one of the greatest snack foods of all time.

          Thank you - i've been eating tuna jerky for years and always get the weirdiest looks

            i think my favorite way to eat tuna aside from sushi is seared.

            take a tuna steak straight from the fridge and rub with sesame oil, fire at 1000* for about 30 seconds each side.

                I wish I had a grill that could do that.
                A chimney starter loaded up can hit ridiculous temps.. Just throw a grate on top.

                  I'll just rub a tuna steak with oil. Coat it with black pepper and a little salt, then throw it on a hot grill or in a hot pan.

                  If you want a sauce to go with it, I'd suggest ponzu.


                  Or, you could sear it. Set it aside. Cook some angel hair pasta on the side. Melt some butter and sautee mushrooms in the pan you seared the tuna in with a little lemon pepper seasoning. Squeeze some lemon or lime juice into the shrooms when tender, and add a little white wine. Thicken sauce. Put tuna into sauce to warm it back up. Serve over the pasta. I do this with prawns and scallops.

                  Another idea would be to sear the tuna again. Drizzle with a balsamic reduction and serve on some greens. To make the reduction just pour some balsamic vinegar into a pan, heat until it thickens stirring regularly. Make a reduction first to make sure you like the flavor. Its kind of sweet and sour.

                  Could always do teriyaki tuna steak too.
