Brisket time again Nov. 1st

This weekend is opening weekend for rifle season for deer hunting so I figured I'd smoke a brisket to take out there for the guys.

Fired up the oven smoker for the second time this week

you brought the trouble to the neighborhood, I'm going to have to ask you to stay away lol... This wont be done until tomorrow... stop by before I head to the lease and you can snag a couple pieces

It's so easy to use... no it doesn't get a smoke ring and no I wouldn't consider myself a smoker like Brent but its still better then store bought or cooked in an oven.

I have really only found one down side.... its expensive to cook brisket, baby backs, spare ribs, etc a few times a week!

I'm more jealous that you get to work everyday I bought this smoker when I got laid off... if I could find a job this will slow down drastically haha

Looking good so far. I decided to Texas Crutch it this time so I just wrapped it up in foil and put it back in the oven/smoker

I'm not feeling to good about this brisket. It was pretty big and its already at 196 IT. I do have it wrapped so I'm sure that made a difference but its only been on for 8 hrs at 225* We will see I guess

the rack is 12'X20" and it is pretty thick throughout I am thinking it was just over 13.5lbs

I just pulled it out of the foil and put it back on the rack to firm it up... I'm going to let is get to about 205 and roll with it
