    I had some from Rudy's last night, it was fantastic. Mine is generally good when I have smoked chicken, but not near the flavors that thiers was.

    How do I do that?

    Do you brine? Inject? What wood do you smoke with?

      never injected chicken, though i have brined, generally using mesquite or oak.

        Are you smoking it whole, or breasts only? bone in skin on, etc?

          well, ive done it several times and ways. Chicken is the meat of choice for my wife, so I generally have to throw a breast or thigh on when I do anything else. Ive done half chickens, whole chickens, leg/thighs, breasts (boneless skinless) though I dont expect much out of the breasts.

            I brine, inject, and rub my chickens. As far as how they get smoked, I usually do the beer can method. If I don't do that, I spatchcock the bird so that it cooks more evenly.

              I've never brine or injected chicken before (or smoked one). I'll have to try that sometime as I've always just grilled them.
