    I love wood fired pizza... my uncle has a pizza oven built into his outdoor kitchen (think big rock igloo) and we get that bitch HOT (850+)... then make pizza by the pool all day.

    Yeah did it low like that on purpose and it is perfect, for our taste at least. It is just slightly crisp on the outside and soft, but cooked on the inside. Would normally do it at 650-675 for 6 mins and was finding that it was burning the bottom faster than the top would cook. I raised the grid another 5 inches closer to the dome and did 550 for 10 mins and they came out exactly like I wanted......

    My smoker is an old, cheap, beat to shit "Char Broil" model I bought used from Evil Jose for like $50. Looks very similar to that. They suck to learn on. It can be infuriating. That said, I've been using it for so long, I can make it do whatever I need it to. It just took some getting used to, and how the smoker behaves with cheap, thin metal. I can use any smoker you put in front of me now, just because I learned everything on that piece of shit. For your occasional backyard bbq, they are just fine once you learn to use it. It doesn't make sense to go spend a couple grand on a trailer smoker, or $1500 on a BGE (with accessories) for someone who only plans to smoke 10-20 times a year.


    Academy has an Oklahoma Joe, or something like that, with a larger barrel, and thicker gauge metal that works great, for $399. Matt has one, and he loves it.
