        Thinly sliced ribeye is the way to go. I use a heavy griddle pan cook it on medium high to high heat wiped down with a little oil and just season it with salt and pepper. I don't know if you've watched them cook the meat at a sandwich shop but it kind of helps to tenderize it if you hack at it a little with the edge of a couple metal spatulas while it cooks. I do onions and peppers and I also like to put the hot and sweet peppers you get in a jar on it. I prefer provolone; not that easy cheese shit.
