A GOOD set of knives shouldn't ever have to be replaced. If you have 2-3 years out of a set of KitchenAid knives, you're ahead of the curve.Originally posted by GeorgeG. I've recently discovered Masahiro knives.
I bought a 240mm double edged fillet knife and it's not a knife, it's a fucking weapon.
I used it on a yellowfin tuna I caught and usually we put the knife in and use the spine as a guide. This knife cut THROUGH the spine it was so sharp and efficient. Here's a pic of how easily it went through the spine.

Dont think I really need anything else. I wont ever buy a block set again. These Shun knives are way better than anything else I have used. The santoku is very versatile you probably could get away with it and a small paring knife.
