This one jumped them while they were out hunting elk, but bear ARE edible and actually quite tasty.

They don't generally eat the meat. On most bear hunts the carcass is left in the field as bait, it will attract other bears. 1200lbs is too heavy to move, they probably skinned it with the head left on it, the skin would then be tanned.

While this may be true in this instance, most bears taken by hunters are no where near 1200 pounds and are easily dressed, quartered and packed out of hunting areas. Black bears seldom get over 500 pounds and actually weigh less than most elk, which are usually skinned and quartered and packed out. I have never packed a bear out before, but I have helped pack a quartered elk a couple miles back to a trail. It does take several trips if you alone, but it is done by most hunters. The ones that leave animals that they shoot to rot are the wasteful assholes that are just thrill-killing.
