 So far most these guys say less than 15 minutes of trimming is necessary. Some don't even trim, they just hold stuff away with zip ties. Not that it's the correct way to do things.
 
 Would something like a half inch wheel spacer fix rubbing?

 Probably make it worse at full lock..  I'm a fan of bigger rims, less sidewall, and lowering on 2wd, and more sidewall and a lift on a 4wd. Your truck will generally handle better with less sidewall, but ride softer with more. That said, plenty of people take 2wd vehicles offroad, so if that's your plan, more sidewall would be better.

 He should be ok with 17's as far as his calipers, as Tahoes came with them too (assuming he hasn't upgraded them).
