    My dad's deer weighed in arond 112lbs (with hide and head) and he got back 58lbs of meat.

    How many lbs of yield are you guys getting from your deer? Is there a stardard 'formula' to go by to figure the yield from hanging weight?

    I've had it stewed, seared backstrap steaks, and in jerky form. I like pronghorn jerky a lot. I do want to try it in a New Mexico style green chili.

    I have always heard the same about pronghorn and audad as well. I'm the same way with duck so I won't hunt them.

    May have been kept in a walk in freezer. We've done that a few times before. Posed them in the freezer and pull them out later for pics.

    You're crazy if you don't. You have access to Elk, Mule Deer, and Pronghorn. All of those are delicious.
