If it were me I would call Pep Boys and talk to a manager. Have the car towed to the store(at their expense) and let them see it with receipt in hand.
After that I would contact Pep Boys corporate office and tell them I am going to take it to a dealer or a trustworthy shop and have it looked over and how do they intend to resolve the expenses.

At the dealer I put several Mazda engines in for pepboys from the stupid stuff they did. They covered it all.

This. I worked for Jiffy Lube right after high school and they paid for several diffs, engines, etc for leaving off drain or fill plugs. None of which were my fault of course

An oil light doesn't mean the engine is out of oil. It just means oil should be added asap. If the engine was killed immediately when the light went off I doubt any damage was done. If you want to make this an issue with Pep Boys then hopefully you did not tighten the plug, call them, tell them what happened and prepare to have the vehicle towed to their shop on your dime.

Ive only did one motor job wallyworld didn't put oil in. Lady burnt that mofo to a crisp.
My neighbor said one of their clowns from another shop (trucking co)did it to a brand new truck, first pm. drove it around the lot till it quit, 40k engine, LMAO!

Those engines will rattle if they are low on oil and you should get VVT codes, go for a few seconds after that though and the timing chain guides will come apart and stop up the oil screen.
