They're looking at retirement in about 2 or 3 years, and in all likelihood I'll be taking over after the decide they're ready to retire.

Since this person has been a long time employee I would not fire her. Simply keep her off of the schedule until she quits. If you fire her she can file unemployment, but if she quits, she's on her own. Secondly, you won't have to pay any employee tax on her if she's not collecting a check from you. Another bonus. I did not read through any of the responses as most looked like they were the usual reach-arounds this crowd is used to.
