Reach out to higher end clientele, learn/perfect the higher end trades (Fondant, image transposition, exotic batter flavors and icings etc), get a reputation for quality, price yourself in the upper 75% of cake makers in your skill set, use your existing clientele and 'waiting list' with a strong hand & don't budge on price.
