When buying from Daniel, he can tell you within a couple days of when the cow was slaughtered. You can let them age up to 6 weeks, give or take a couple days from the slaughter date.

mstang - I'm just giving you shit. But seriously, just do it. Once you get your first batch, you're going to regret not going to him sooner. I promise, the deals are worth the drive. Just make the trip when he has 3 or more primals to sell. Or couple 2 primals with a case of ground beef or something. Your grocery store can't touch these prices 99.9% of the time.

No shit, let those MF'ers age. I've got 2 still in the fridge that have been aging for like 4 weeks already.

The first set of primals i cut open pretty much the night of getting them and started eatling them immediately. They were 10x better than any steak i've gotten from Central Market or any box supermarket - even Sams.

The Chairman Reserves from last month were already nearly 2 weeks wet aged already but I just let them go for another 2 week and it they were awesome.

And you'll be surpised that even a single primal doesn't take up that much space in your fridge.

Worst case, you let me know what you want and I can work with you to split an order with you. We can then work out a handoff.
