    I'll trim all the rib meat and leftover white shit (tendons?) out of it, then usually hammer flat and cook. out of a pound of chicken i probably end up with 2/3 - 3/4 lb of meat to cook after cleaning it up.

            30 minutes in a lightly diluted bleach brine handles the salmonella. Then you can make chicken sushi.
