The only benefit a blendtec or Vitamix would have over your usual residential blender is the motor power and reliability. That is the most challenging part of it. In regards to food prep everything is sized in liquid sizes. Gallons, quarts, liters, etc. 40 lbs of peppers is a fucking shit ton of volume. I don't even think you can fit 40 lbs of peppers in a 55 gallon drum. Your reading comprehension sucks. I'm not sure what you're missing here, but he is starting with raw peppers. He wants to load them up, set the blender timer, and not sit there and feed peppers in for hours at a time.
